Einkorn Pancakes

  1. Ingredients
    1. 1.5 cups einkorn all purpose flour
    2. 1 Tablespoon sugar
    3. 2 teaspoons baking powder
    4. 0.5 teaspoon himalayan pink salt
    5. 0.5 teaspoon baking soda
    6. 2 large eggs
    7. 1.5 cups milk (buttermilk? hell no)
    8. 2 Tablespoons butter (or cocoanut oil)
    9. Pure maple syrup

    1. Large frying pan
    2. Medium mixing bowl
    3. Small mixing bowl
    4. Sturdy mixing spoon
    5. Graduated measuring cup
    6. Metal spatula for flipping
  3. Operations
    1. In the medium bowl, add einkorn flour, sugar, baking powder, baking soda, and salt. Mix well while dry.
    2. Beat the eggs and milk in the smaller bowl. Beat until uniform.
    3. Add the wet ingredients to the dry ingredients. Mix well.
    4. Let rest for most of a minute.
    5. Preheat the pan to 4. Add the cooking oil.
    6. Cook 1/4 cup of batter for 90 seconds to two minutes
    7. Flip. Cook for 90 seconds
    8. Remove to a plate. Repeat until batter is finished.

  4. Serving
    1. Drizzle the pancakes with maple syrup.
    2. Butter optional.
