Breakfast Quiche

  1. Ingredients
    1. Half a sweet yellow onion
    2. Ten slices of cooked bacon
    3. Twelve eggs
    4. Four slices of high fibre bread
    5. Two 7-oz tins of diced Ortega chilies
    6. Two packages of coarse grated Mexican two-cheese

  2. Tools
    1. Large stable cutting board
    2. Sharp paring knife.
    3. Blender
    4. 9 by 13 inch metal baking pan
    5. parchment paper
    6. PAM
    7. Large mixing spoon.

  3. Preparations, execution.
    1. Spray PAM onto the 13 x 9 inch metal baking dish.
    2. Cover the baking dish with parchment paper
    3. Place the bread in the bottom of the pan.
    4. Clean and dice the onion. Sprinkle over the bread.
    5. Drain the Ortega chilies. Sprinkle over the onions.
    6. Slice up the cooked bacon. Sprinkle over the chilies.
    7. Beat the eggs in the blender
    8. Pour the egg mixture over the bread, onions, chilies, and bacon.
    9. Cover with the shredded Mexican cheese.
    10. Preheat the oven to 350 degrees.
    11. Place the pan in the oven. Set for 30 minutes.
    12. When finished, take the pan out. Let it cool until ready to serve.

  4. Slice serving-sized sections. Serve on medium plates.
