Meat Loaf (Charlotte Collins)

  1. Ingredients
    1. One half small onion, diced.
    2. 2.0 pounds of grass fed 85% ground beef
    3. Two eggs
    4. 1.0 teaspoon fine (not coarse) pink Himalayan salt
    5. PAM
    6. Parchment paper
    7. One long tube of standard Ritz crackers
    8. 1.0 Tablespoon sriracha sauce.
    9. Trader Joe's natural ketchup

  2. Tools
    1. Large stable cutting board
    2. Sharp paring knife.
    3. One medium large mixing bowl.
    4. Measuring cup.
    5. Measuring spoons.
    6. 9 by 13 inch metal baking pan
    7. Large mixing spoon.
    8. Two disposable vinyl gloves for hand mixing.

  3. Preparations, execution.
    1. Clean and dice the onion. Save to a small bowl.
    2. Beat the eggs in the mixing bowl.
    3. Add the onions and the salt. Mix well.
    4. Add the sriracha sauce. Mix well.
    5. Crush the Ritz crackers in a Ziploc bag using the rolling pin.
    6. Add the crushed crackers to the mix.
    7. In a larger bowl, break up the two pounds of hamburger.
    8. Add the mixture. With gloves on, mix well.
    9. Spray PAM onto the 13 x 9 inch metal baking dish.
    10. Cover the sprayed pan with parchment paper.
    11. Place the hamburger mixture into the baking dish.
    12. Form into a mound along the long axis of the pan, separating the hamburger mixture from the two long sides of the pan.
    13. Preheat the oven to 425 degrees.
    14. Place the pan in the oven. Set for 60 minutes.
    15. With 10 minutes left to cook, put some ketchup over the top of the meat loaf.
    16. When finished, take the pan out. Cover with foil until ready to serve.

  4. Slice into 1 inch sections. Serve with ketchup.
